JT Farms Cabbage Patch Soup
2 quarts water
1 medium head cabbage
½ lb. boneless pork tenderloin cut in cubes.
2 cloves garlic and 2 tsp. each chopped parsley and dill.
!/4 lb. bacon chopped fine
1 carrot
½ cup chopped onion
1 Tbsp. flour
2 medium potatoes cut into cubes.
2 Tbsp. tomato paste
2 or 3 bullion cubes to taste
Shred cabbage finely, place in pot, with pork cubes and 2 quarts water, bring it to a boil. Add dill parsley and garlic.
Reduce heat and simmer 1 hr.(meat and cabbage should be tender)
Prepare roux, fry bacon until browned add onions and fry until lightly browned (stir in flour)
Bring cabbage and meat broth back to low boil, add bacon-onion roux and stir well. Simmer for ½ hr.
In a separate pot, cook potatoes in salted water to cover. add tomato paste to broth and stir. Add bullion cubes and cooked potatoes with cooking water.
Extra water or broth may be added for a less hearty soup.
JT Farms Mini Stuffed Peppers
2 Tbsp. chopped walnuts or almonds
2/3 cup flavored cheese for spreading (about 5 oz.)
2 teaspoons dried cranberries
1 green onion (rinsed)
Steps:
Toast nuts on low 5-7 minutes until toasted.
Chop cranberries finely: slice green onion thin.
Chop nut coarsely mix ingredients into cheese until well blended.
Cut peppers in half lengthwise, remove seeds.
Fill each pepper with cheese mixture and arrange on serving platter
Chill until ready to serve.
JT Farms Thrifty TomatoSoup
4 Cups garden fresh tomatoes [diced]
1 cup fresh or frozen sweet corn
4 cups chicken stock [homemade or store bought]
4 slices smoked bacon
1 cup chopped onion [about 2 medium]
2 Tbs. brown sugar
2 Tbs. vinegar
1 Tbs. minced garlic
2 tsp. minced sweet basil
fresh ground pepper and salt to taste
¼ tsp. mesquite liquid smoke
6 large soda crackers [ crushed]
1 cup milk
Place bacon in a large pot fry until crispy. Remove bacon add onion to bacon drippings cook until soft and translucent. Add diced tomatoes, basil, garlic, chicken stock, vinegar, brown sugar, salt and pepper.
Cook about 15 minutes stirring occasionally. Place tomato mixture in blender and puree for a few seconds. Soak soda crackers in milk until soft. Return tomato mixture to pot add liquid smoke,
bring to a boil add milk with crackers, Whisk for just a few seconds.
Serve soup garnished with crumbled bacon, minced sweet basil, and a little parmesan cheese.
This makes 5 to 6 servings.
